Apple Butter – Version 11 ________________________________________ Servings – 1 1/2 Pints Prep Time - 25 Minutes Cook Time – High 8 to 10 Hours Low 8 to 10 Hours ________________________________________ Ingredients: • 4 pounds apples, cored and sliced (don't peel) • 1 1/3 cups packed brown sugar • 1 cup apple cider • grated zest and juice of one lemon • 3 tablespoons grated ginger
Instructions: 1. Combine apples, brown sugar, apple cider, zest, juice. 2. Cover and cook 8-10 hours on low, till apples are very soft. 3. Then stir in ginger, increase heat to high, uncover and cook (stirring now and then) till mixture is reduced to about 3 cups for 8 to 10 hours. 4. Put the resulting mash through a food mill.
