Arizona Black Bean Dip ________________________________________ Servings – 8 to 10 Prep Time - 15 Minutes Cook Time – High 1 1/2 to 2 1/2 Hours ________________________________________ Ingredients: • 2 (14 ounce) cans black beans, drained • 1 medium onion, finely diced • 4 cloves garlic, minced • 1 tablespoon ground cumin • 1 teaspoon cayenne pepper • 14 ounces fresh goat cheese, crumbled (or any other fresh farmer’s cheese) • Garnish: 1/4 cup green onions, thinly sliced (reserve 1 tablespoon for garnish) • 1/4 cup fresh cilantro, chopped (reserve 1 tablespoon for garnish) • 2 tablespoons pumpkin seeds, shelled and toasted, for garnish
Instructions: 1. Combine all the ingredients in the slow cooker, except for the garnish ingredients. 2. Cook on high 1 1/2 to 2 1/2 hours or until the cheese has melted and is bubbly. 3. Transfer to your serving dish and garnish the top with a sprinkling of green onions, cilantro, and pumpkin seeds.
