ARROZ CON POLLO ________________________________________ Servings – 4 Prep Time - 20 Minutes Cook Time – High 3 to 4 Hours Low 7 to 9 Hours ________________________________________ Ingredients: • 4 Chicken breast halves, skin and excess fat removed • 1/4 teaspoon salt • 1/4 teaspoon pepper • 1/4 teaspoon paprika • 1 tablespoon oil • 1 medium onion, chopped • 1 small red pepper, chopped • 1 clove of garlic, minced • 1/2 teaspoon dried rosemary leaves • 1 (14 1/2 ounce) can crushed tomatoes • 1 (10 ounce) package frozen peas
Instructions: 1. Season chicken with salt, pepper, and paprika. 2. In a medium skillet, heat oil over medium-high heat. 3. Add chicken and brown. 4. Put chicken in the slow cooker. 5. In a small bowl, combine remaining ingredients except the peas. 6. Pour over chicken. 7. Cover and cook on high 3 to 4 hours or low 7 to 9 hours 8. One hour before serving, add peas. 9. Serve over rice.
