Autumn Chicken ________________________________________ Note: You can use a small pumpkin instead of the acorn ________________________________________ Servings – 4 Prep Time - 20 Minutes Cook Time – Low 8 to 10 Hour(s) ________________________________________ Ingredients: • 2 large or 4 small chicken breasts • 2 parsnips - 2 carrots • 1 acorn squash • 1 (14.5 ounce) can of chicken broth • 1 teaspoon garlic, minced • Salt • Pepper • Nutmeg • honey
Instructions: 1. Peel and chop carrots and parsnips and place them in the bottom of the slow cooker. 2. Sprinkle with minced garlic. 3. Place chicken on top. 4. Pour in chicken broth. 5. Cut squash into chunks and slice off the skin. 6. Place on top of chicken. 7. Sprinkle desired amounts of salt, pepper and nutmeg on top of squash and drizzle enough honey on top to lightly cover the squash. 8. Cook on low 8-10 hours.
