Autumn Squash Casserole ________________________________________ Servings – 6 to 8 Prep Time - 20 Minutes Cook Time – High 3 to 4 Hours Low 6 to 8 Hours ________________________________________ Ingredients: • 1 stick of butter, melted • 1 onion, chopped • 5 pounds butternut squash, peeled and cut into 1/2 inch pieces • 1 cup orange juice • 1/2 cup maple syrup • 1 teaspoon cinnamon
Instructions: 1. Place the butter, onion, squash and orange juice in the slow cooker. 2. Cook on Low for 6 to 10 hours or on High for 3 to 4 hours. 3. Add the cinnamon and maple syrup. Using a potato masher, mash the ingredients. 4. Mix until smooth and serve warm.
